We proudly source seasonal, local produce, particularly from Queensland’s most sustainable resources. Working closely with suppliers, Executive Chef Jake Nicolson curates a menu that not only uses high quality ingredients, but fuses them with unique flavours from around the world. The kitchen also work hard to include native ingredients used by first nations people, such as lemon myrtle which has been used by indigenous Australians for over 40,000 years. Our freshly shucked oysters are also prepared with a native finger lime mignonette, finger lime is native to the rainforests of the border ranges of SE Queensland and Northern NSW.
We work closely with our suppliers, winemakers and our staff to ensure each wine is a true representation of the region, vintage and variety. Our senior sommelier, Chris Entwistle works tirelessly to create a wine list that works in perfect harmony with the finely tuned flavours on Blackbird’s menu. Beverage operations are spearheaded by Ghanem Group Head of Beverage Aaron Clark . Aaron is dedicated to curating beverage menus that not only highlights the right drink, but taps into the individual guest’s psychology to bring them a beverage experience that they will be talking about for years to come.

Our Meat and Seafood Suppliers
Our lamb is produced by Longreach Organic White Lamb. Robert Gray supplies Blackbird with beautiful organic pasture fed Australian White lamb which has a succulent and full flavoured meat quality. Buying organic not only assures premium produce, but also contributes to soil health and biodiversity, making it a sustainable meat source.
Blackbird is proud to deliver some of the highest quality seafood Australia has to offer, thanks to the ongoing dedicated efforts of local suppliers. Notable Blackbird seafood suppliers include Rocky Point Aquaculture, Fraser Isle Spanner Crab, Walkers Seafoods and Ora King salmon.

Big Heart Bamboo – Becky Dart
Fresh Organic bamboo shoots from the Sunshine Coast are grown near Eumundi, the shoots are harvested in the morning and delivered to Blackbird within 8 hours to ensure we receive an amazingly fresh and premium local product which we often use to garnish dishes like the Tuna and Cobia crudo.
Falls – Farm
Local organic fresh fruit and vegetable operating out of Mapleton QLD that offers seasonal heirloom varieties, we often source rare and hard to find ingredients that we use across the menus.
