Menu

The Blackbird menu is an ode to Australian oceans and rich pastures with a particularly strong nod to Queensland’s breathtaking coastline, and wild and cultivated land. Queensland-sourced caviar, crab, king prawns, Barramundi, beef, kangaroo and lamb are complemented with fresh produce that is plucked from local, heritage, heirloom, wild and native sources. Our Argentine-inspired, US-imported Infierno 96 wood-fire grill is the beating heart of the restaurant, filling the space with a beautiful smoked wood aroma and unrivalled results of flavour.

Beverages

Blackbird’s wine cellar is representative of vast regions, vintages and varieties. Senior Sommelier Chris Entwistle works passionately with winemakers to source from a wide range of producers – from the small and relatively unknown, to those who are internationally renowned. Ghanem Group Head of Beverage Aaron Clark curates an exceptional drinks list that complements the produce-rich menu and extraordinary river views. Cocktails are inspired by international travels, locally distilled spirits and ingredients and ever-evolving global trends. Sit back, sip and relax.

Private Dining

Make your Blackbird experience extra special in one of our elegant private dining rooms or exclusive spaces. Our private dining rooms cater to groups of 12-28 guests, or host an intimate group in one of our glamorous Gatsby booths. For larger celebrations and cocktail functions take over our 1920s-inspired bar.

Ghanem Group Executive Chef Jake Nicolson bursts with pride at the partnerships he has forged with Queensland farmers, fishermen and women, and suppliers who are known for their organic, sustainable and ethical practices.

Among our hit-list of first-grade produce is Robert Gray’s Longreach Organic White Lamb, Paroo Kangaroo, Fraser Isle Spanner Crab, Rocky Point Aquaculture, Walkers Seafood, Ora King Salmon, and Infinity Blue Barramundi. Within our beef portfolio is Wagyu from S.Kidman, King River and Westholme, Bachelor Black Angus, and Yardstick British Bred beef.
